Recipes - Grilled Loch Fyne Oysters with garlic breadcrumbs
The garlic butter and breadcrumbs can be prepared in advance – open the oysters just before serving)
Prepare the garlic butter by finely chopping the garlic and parsley and mixing into the softened butter.
Open the oysters taking care to keep as much of the liquor (liquid) as possible. Ensure they smell fresh and look plump, and take out any broken shell.
Place all 12 oysters on a baking tray and spoon a little garlic butter into each oyster.
Sprinkle each oyster with fresh white breadcrumbs
Place under a hot grill for a minute until they are hot and the breadcrumbs are starting to brown
Serve with a wedge of lemon.
