Recipes - Potted Shrimps

1) Melt the butter, add the chopped onion and sweat together without any colour for 3-4 minutes.
2) Add the prawns and continue to cook for a further 3-4 minutes.
3) Season with Worcestershire sauce, cayenne, freshly milled black pepper, anchovy essence, lemon juice and salt.
4) Check the seasoning, place into individual moulds and refrigerate.
5) Serve with warm toast.
The potted shrimps can be either served in or out of the moulds, whatever is desired or easiest.

Serves 8

500g Shrimps
150g Unsalted Butter
1 small Onion, finely chopped
1/2 bunch Chives, finely chopped
Salt
Freshly milled black pepper
Cayenne Pepper
Worcestershire Sauce
Anchovy Essence
Lemon Juice
