Recipes - Baked Orange and Lemon Rice Pudding
I. Put all the ingredients into a large pie dish.
2. Grate nutmeg onto the top.
3. Place in a low to moderate oven in a bain-marie 250°F - 280°F for approximately 2-3 hours depending on your rice.
4. It should have a nice brown skin - if it starts to colour too much, cover with foil.
5. Serve straight away.

3oz - Pudding Rice, washed
2 pints - Full Cream Milk
2oz - Caster Sugar
1 - Orange Zest
1 - Lemon Zest
1 - Vanilla Pod (split & deseeded)
Nutmeg (grated)
