Recipes - Sticky Toffee Pudding

1. Cream together butter and sugar thoroughly
2. Add beaten eggs slowly until combined
3. Sieve flour and bicarbonate of soda mix into creamed mixture
4. Add dates, coffee essence and hot water and make into a very soft butter.
5. Pour into greased flour mould
6. Bake for 30 minutes at 350 °F. Turn out and serve with butterscotch sauce and vanilla ice cream.

Butterscotch Sauce

1. Boil water and sugar together until light golden caramel
2. Leave to cool for 10 minutes and whisk in butter and cream
3. Finish with black treacle.

3 oz Softened Butter
4 oz Brown Sugar (Dark)
3 Beaten Eggs
6˝ oz Self Raising Flour
1 Teaspoon Bicarbonate Soda
6 oz Chopped Stoned Dates
˝ Teaspoon Coffee Essence
˝ Pint Boiling Water


Butterscotch Sauce

6 oz Caster Sugar
1/6 Pint Water
1/8 Pint Double Cream
6 oz Butter (unsalted)
1 oz Black Treacle
